Veggie-based Blueberry Smoothie Bowl (low-sugar)

Ever thought of adding cauliflower to your smoothie? For some of you it probably seems a little weird… but trust me, it’s delicious! Cauliflower gives this smoothie it’s thick creamy texture plus it is packed full of vitamins and minerals. Replacing banana with cauliflower is great if you’re someone who is cutting down on sugar or just wants to try something a little different. The addition of blueberries (which is a low sugar fruit) adds a natural sweetness to this smoothie. Such a delicious and easy way to sneak some extra veggie serves in for the day! Veggie-based Blueberry Smoothie Bowl (low-sugar)

Serves two

Ingredients
  

  • 1 1/2 cups frozen cauliflower florets steam first and then freeze
  • 1/4 cup frozen avocado
  • 1 1/2 cups blueberries not frozen
  • 2 Tbsp vegan vanilla protein powder
  • 1 1/2 cups non-dairy milk soy or almond work well
  • 1/4 tsp vanilla bean powder
  • 1 heaped Tbsp almond or peanut butter
  • Toppings:
  • Hemp seeds
  • Blueberries
  • Bee pollen
  • Almond or peanut butter drizzle
  • Coconut flakes would also be delicious

Instructions
 

  • Simply blend all smoothie ingredients in a high speed blender until smooth.
  • Pour into bowls then add toppings and enjoy xx

    Glad I’m not the only one that likes to put cauliflower in a smoothie! I’ve never actually used avocado in a smoothie, but I bet it tastes really nice!

    Hi. Just found you on IG and wanted to try a recipe. You have listed vegan vanilla powder, and then you also have vanilla powder as well. Is this the same thing?

      Hi Natalie ! No These are different one is vegan vanilla “protein” powder and the other is just vanilla bean powder:) hope this helps xx

    Is it frozen and precooked cauliflower or could you buy it fresh and put it in the freezer? Keen to try!

      I bought mine fresh then steamed and then put in the freezer … I haven’t tried non steamed cauliflower… it might just not be as creamy but I couldn’t really say if it would work or not 🙂
