Vegan Neapolitan Dream Cake

Hi friends,

Every year for my birthday I get to create a delicious birthday cake for myself and to share with others of course. As I reflect back on the years, I can honestly say I’m so grateful for all my experiences good and bad  as they have made me grow and lead me to my purpose and passion in my life. My birthday used to be about drinking and partying but now it’s about having a day of self love and spending time with my family and loved ones.

When I was deciding what to make this year one thing kept popping into my head, Neapolitan ice cream, a childhood favourite of mine! I don’t know if you remember or ever experienced Neapolitan ice cream, it contained a layer of chocolate, a layer of strawberry, and a layer of vanilla.  The only difference with my version is that it is made with natural and healthy ingredients that won’t leave your tummies aching.

So like a lot of my raw cakes they are always dairy, gluten and processed sugar free! I replace cream cheese for raw cashews which have the same smooth and creamy texture as cheese and they are a wonderful source iron, copper and zinc! The strawberries really make this cake extra delicious and works so well with the rest of the flavours. Strawberries are in season right now so i’ve been making the most of them. Strawberries are not only juicy and delicious, they are loaded with antioxidants such as vitamin C and have been known to alleviate inflammation and bad breath. Like all fruits and vegetables, try your best to get locally grown organic because you don’t want want all those nasty pesticides in your bodies or in your cake for that matter!

Vegan Neapolitan Dream Cake

Ingredients
  

  • Base:
  • 1 cup medjool dates seeds removed
  • 1/2 cup raw almonds
  • 1 cup shredded coconut
  • 2 Tbsp. lemon juice
  • Pinch of salt
  • Chocolate layer:
  • 1 cup cashews soaked 4-6 hrs
  • 1/4 cup cacao powder
  • 1 Tbsp. coconut oil
  • 2 Tbsp. maple syrup
  • 1/3 cup almond milk or coconut + more if needed
  • Strawberry layer:
  • 1 cup cashews soaked 4-6 hrs
  • 1 cup frozen strawberries
  • 2 Tbsp. maple syrup
  • 1/3 cup almond or coconut milk
  • Vanilla layer:
  • 1 cup cashews soaked 4-6 hrs
  • 1/2 tsp. vanilla powder
  • 1/3 cup almond or coconut milk
  • 2 Tbsp. maple syrup
  • Toppings:
  • Strawberries
  • Raw Chocolate

Instructions
 

  • For the base, blend together all base ingredients until combined (don't over blend).
  • Line the bottom of a spring form cake tin with baking paper and transfer base into the tin spreading out evenly with fingers. Place in the freezer while you prepare remaining ingredients.
  • Rinse cashews for chocolate layer under water and place in blender along with all chocolate layer ingredients until smooth. Pour into base, spread out with a spoon and place back in freezer for 10-15 mins. Clean out blender.
  • For the strawberry layer, place the strawberry layer ingredients into the blender and blend until smooth. Pour onto the chocolate layer and spread out with a spoon. Place back in freezer for 10-15 mins. Clean out blender.
  • Blend together all vanilla layer until smooth. Pour onto the strawberry layer, smooth out with a spoon and place back in freezer for 6 hours or overnight to set.
  • When ready, let in sit out of the freezer to soften, top with strawberries, melted raw chocolate and serve!
  • Store in fridge so for the cake to be nice and soft.

    Hi Tiana,

    I plan to make this cake for my friend’s birthday, it looks fabulous and I love that it’s just 2 tbsp of sweetener per layer. One question – is it correct that there is no coconut oil in strawberry and vanilla layers ? Also I wonder if 1 tbsp of coconut oil is enough for chocolate layer, other recipes usually use 1/2 cup.

      Hi Maria !! So happy you are making this for your friends birthday! It’s delicious (and healthy ) yes the recipe is correct.. you don’t need the coconut oil to hold the cake together the cashews will do that … you can add coconut oil to the other layers if you like but you wouldn’t need much! Hope this helps xxx

    The cake was a total success. The cooking didn’t go smoothly though )) I bought cashews at the Indian Health Store and turned out cashews absorbed all the aromas from the store. So the first cake had a very pronounced Indian curry taste ))) Luckily I had enough time to make another one which was a total success. And I had a whole weird one for myself )))

Baked Raspberry & Banana oats ✨ Absolutely lovi Baked Raspberry & Banana oats ✨ 
Absolutely loving this combination for baked oats! After eating oats the same way foreverrr 😜 It’s fun to change it up a bit! 
✨Packed full of goodness for the whole family- These are a good source of fibre & Protein keeping you satisfied for longer! 
✨If you’re time poor in the morning you can meal prep this recipe- just slice up and store in a container in fridge or freezer and heat up. 

Recipe: 
2 cups oats 
2 ripe bananas 
1 1/2 cups milk (I used soy) 
1 Tbsp flaxseed meal 
1 tsp baking powder 
1/2 tsp cinnamon 
1 Tbsp maple syrup 
1 1/2 cups frozen raspberries (+ extra for topping) 

✨ Pre heat oven to 180*c 
✨To an oven dish, mash banana then add oats, flaxseed meal, baking powder, cinnamon, maple syrup and milk- stir until combined. 
✨Add raspberries and stir into mixture. Place a few additional raspberries on top 👌
✨Bake for approx 30 mins or until the top becomes a golden colour. 
✨When it’s done, let it cool for 5 mins before serving. 
✨Suggested toppings: Yoghurt (greek or coconut) , hemp seeds, raspberries and maple syrup.

Then you need to try these CHOC CHIP CHICKPEA COOKIES 🍪 these are super delicious and only require a few simple ingredients! they are a perfect sweet snack as they are packed full of protein and fibre, are naturally gluten and dairy free! My little helper loved being involved in making these (and eating most of them 😜) 

Makes approx: 7 cookies 
Ingredients: 
1 can chickpeas (drained + rinsed) 
1/2 cup natural peanut butter 
1 tsp baking powder 
1/2 tsp baking soda 
Pinch of salt 
1/3 cup maple syrup 
Dark chocolate (approx. 1/2 bar chopped up or 1/2 cup choc chips) 

🌸 Pre-heat oven to 180*c 
🌸 Line a baking tray with baking paper and set aside. 
🌸 Add the chickpeas + Peanut butter + baking powder + baking soda + maple syrup to the blender and blend with a food processor or high speed blender like vitamix (I have used both) until smooth. 
🌸 Let the mixture cool by placing it in fridge for about 10 mins then stir in the chocolate chips. 
🌸 Scoop a tablespoon of the mixture and press into baking tray and continue with remaining mixture. 
🌸 Bake for 15-20 mins and enjoy right away or let cool and store in an airtight container in the fridge.

Sweet Potato Chickpea Curry✨
✔️Delicious 
✔️Quick & easy to make 
✔️Affordable 
✔️Good source of plant-based iron (from spinach & chickpeas), fibre and protein. 
✔️Family friendly 

What you need: 
✨1 brown onion, diced 
✨3-4 cloves of garlic, crushed 
✨Spices: 1 tsp. garam masala + 1 tsp. curry powder + 1/2 tsp. ground turmeric + 1/2 tsp. ground coriander + 1/2 tsp. ground cumin. 
✨1 Tbsp. grated ginger 
✨1 large sweet potato, skin removed and chopped into cubes 
✨1 can chickpeas (Drained & rinsed) 
✨1 can diced tomatoes 
✨1 can coconut milk 
✨1 cup veggie stock 
✨ Add in’s: spinach, lime and natural yoghurt. 

How to make: 
*Add onion and garlic to large saucepan @cosmiccookwareau with a small amount of oil and cook until soft. 
*Add in spices and give a quick stir then add ginger, sweet potato, chickpeas, tomatoes, coconut milk, stock and stir together. 
*Simmer on low heat until sweet potato is cooked a sauce starts to become thick (approx 30 mins). Keep the lid slightly off the pan to allow it to thicken up.
*Add in spinach at the end and stir though along with a squeeze of lime. 
*Serve with serve with basmati rice or quinoa or have on its own.
*I added a dollop of natural yoghurt to mine and to my daughters (takes out the spice if it’s too spicy for your toddler!)

My go-to easy fluffy pancakes that require minimal ingredients, high is fibre, and are toddler approved! My daughter loves these pancakes and also loves to help make them😉 Great for breakfast or a lunchbox snack. 

Being a mother, I am more mindful about what I cook for my familly  and also what I cook my food in.  I am lucky enough to have recived this beautiful Non-stick and Non-toxic pan from cosmic cookware which will keep toxic chemicals out of my food. This pan is so versitle- perfect for pancakes, one-pot meals and is oven safe. It’s also super easy to clean which is perfect for mums like me that don’t have much time! I got the Cosmo Pan in green bean and has been the best addition to my kitchen 💚 @cosmiccookwareau 

What you need:
1 1⁄2 cups oat flour 
1 medium ripe banana
1 cup plant-based milk (I use soy)
1 tsp. apple cider vinegar
1⁄2 tsp. baking soda 
Toppings:
Berries
Sliced banana
Maple syrup

How to make
1. Place all ingredients into the blender and blend until smooth.
2. Heat pan, add 1⁄2 tsp. coconut oil and pour small amount of pancake mix on pan (about 1⁄4 cup)
3. When you see a few air bubbles forming, add a few fresh blueberries (or sliced banana if you prefer) now it’s time to flip! Cook the other side for another minute or so then transfer to a plate. Continue with the remaining mixture.
4. Once you have used up all the mixture, top with the optional toppings and enjoy. Can also be stored in container in fridge for later xx

Because it’s not Easter without a little bit of chocolate 🍫 Super easy to make and  delicious!! 
What you need: 
1/4 cup coconut oil 
1/4 cup maple syrup 
3 tbsp. Peanut butter 
2 cups brown rice puffs
1/4 cup desiccated coconut 
2 tbsp. cacao powder 

How to make: 
🍫 To a mixing bowl add the coconut oil, maple syrup and peanut butter and stir until combined. 
🍫Add the brown rice puffs, coconut and cacao and stir together. 
🍫Place mixture into silicone muffin moulds or cupcake baking cups, press down firmly and place in the freezer for 1 hour to set! 
🍫 Keep them Stored in freezer and enjoy 😉 🍫
