Raw Pistachio, Coconut & Lime Cheesecakes

Raw/ Vegan/ Gluten free/ Dairy Free/ Processed Sugar Free

Pistachio, coconut and lime is the most delicious flavour combo! This is a recipe I just keep coming back to… it seems to always be a winner when I share this one with friends and family! limes are amazing in raw cheesecakes as they add that zest of freshness to this dessert! Limes are a citrus fruit that provides a number of benefits such as aiding in digestion, contain antioxidants (which help fight free radicals and protects your immune system) and are an excellent source of vitamin C. Vitamin C is great to boost our immune system and would also be a perfect dessert in winter when those nasty colds are going around!

Raw Pistachio, Coconut & Lime Cheesecakes

You will need: square cake tin, high speed blender of food processor and baking paper.

Course Sweet Treats

Ingredients
  

  • Base:
  • 1 cup medjool dates
  • 1/2 cup desiccated coconut
  • 1/2 cup almonds
  • 1/2 cup pistachios
  • 3 tablespoons coconut oil
  • 1/2 teaspoon cinnamon
  • 1 Tbsp. lime rind
  • pinch of salt
  • Filling:
  • 2 cups cashews soaked overnight in water
  • 1/4 cup coconut oil
  • 1 cup coconut cream
  • 1 cup desiccated coconut
  • 2 limes juiced
  • Rind of 1 lime
  • 1 teaspoon vanilla
  • 1/4 cup maple syrup or brown rice syrup
  • Garnish:
  • Crushed pistachios
  • Lime
  • Grated lime rind

Instructions
 

  • Line your square cake tin with baking paper and set aside.
  • Blend all base ingredients, scoop out into baking tray and press down with your fingers then place in freezer.
  • Blend all filling ingredients until creamy, pour onto base, smooth over with the back of a spoon and place in freezer for at least 4 hours or you can leave overnight.
  • Take out of freezer and cut into squares. Top with your garnish and enjoy!!
  • Can store in fridge or freezer.

    I was fortunate to have two of my girls spend the night with me recently. They insisted that we try our hand at your recipes. We picked this one and the zucchini pesto to try.     Hello. I am new to finding your site. I have recently gone back to a vegan lifestyle after having been told by a doctor in 2014 I needed meat in my diet as medicine for a thyroid condition. After given that advice and for one year staying on meat….life got much worse. I am happy to be back on a vegan diet which I was vegetarian for many years. I haven’t had a chance to find out a whole lot about you yet but I am looking forward to making some of your amazing desserts soon. I would love to have any feed back you may be willing to share. One of my biggest questions is how can I get more fat from raw/vegan food. I seem to be recently craving cheese and its the fat in cheese I am craving so I know my body is need more fat from raw foods. There has to be more than just avocados and nuts/seeds??       Hi Crista, Welcome ๐Ÿ™‚ really nice to meet you! Sounds like a very similar story to mine. I’ve been vegan for over a year now and it took me a while to find what was right for me. It’s hard to know why you are getting these craving without knowing exactly what you eat in a day… my guess would be that you may not be eating enough. Are you eating enough food?? Lots of vegan food such as rice, quinoa, lentils, oats, veggies (raw and cooked) and fruit? or are you 100% raw? It takes a while to find exactly what works for you but don’t give up! Looking forward to hearing from you again!

      Personally I would give it some bench time as it’s hard straight out of the freezer but either way it fine ! You can also store in the fridge and it will stay nice and soft:)
