Orange, Ginger + Fig Granola

I’m such a lover of homemade granola! It’s easy to make, full of fibre, protein and healthy fats! Oranges (in this recipe we are just using the rind) contain lots of vitamin C and vitamin A which are amazing for your immune system. Ginger is anti-inflammatory and can help aid in digestion! I use ginger a lot in my cooking and also grated in some warm water throughout the day:). Another main ingredient to this recipe is dried figs. They add the right amount of sweetness without being overpowering, are high in fibre, do not spike blood sugar levels, and are a good source of iron!

Vegan + refine sugar free

When i’m feeling like a change from my oats or smoothie for breakfast I will have a bowl of this granola with some fruit + homemade almond milk or on top of a smoothie bowl for extra goodness! Hope you enjoy this recipe xx

Orange, Ginger + Fig Granola

Ingredients
  

  • Dry ingredients:
  • 2 cups oats
  • 1 cup raw almonds chopped
  • 1 1/2 cups coconut flakes chopped
  • 1/2 cup pumpkin seeds
  • Grated rind of one medium orange
  • 3 Tbsp. ginger grated
  • 1/2 tsp. cinnamon
  • Wet ingredients:
  • 1/4 cup coconut oil
  • 2 Tbsp. maple syrup
  • Add in after cooked:
  • 1 cup dried figs chopped

Instructions
 

  • Pre-heat oven to 180*C.
  • Mix together dry ingredients well then add in melted coconut oil + maple syrup and stir together until well combined.
  • Line a baking tray with baking paper and evenly spread out granola mixture then place in oven to cook for about 30 mins.
  • Keep checking every 10 mins and flip mixture around the tray so it all cooks evenly.
  • Once cooked (should look slightly golden), Let cool and add in chopped figs.
  • Store in a glass jar and enjoy!

VANILLA SPICED BREAKFAST SMOOTHIE ✨✨✨ I’ve VANILLA SPICED BREAKFAST SMOOTHIE ✨✨✨ I’ve been loving this smoothie lately! 
this is the recipe from my blog if you want to try it out- I adjusted the recipe slightly:
1½ frozen bananas
½ cup gluten free oats
1 tsp ground cardamon
1 tsp fresh ginger
1 tsp cinnamon
⅓ cup almonds (soaked) 
½ tsp vanilla powder
Almond milk to blend (add a cup and add more when needed to get the right consistency)
Top with hemp seeds, almonds & cinnamon🌸

Roasted Veggie + Quinoa Goodness Bowl 🌸 with a Roasted Veggie + Quinoa Goodness Bowl 🌸 with a little bit of meal prep you can throw together a delicious and healthy lunch or dinner! I always like to make some quinoa so I can add it to lunches for the next few days- Quinoa stores really well in the fridge and if a great source of protein + fibre (keep you satisfied for longer)! I roasted my favourite veggies-sweet potato and zucchini- and that’s all you really need to prep! 
🌸 for this bowl I added the quinoa and veggies with spinach + avocado + turmeric sauerkraut + super seed mix @pimp.my.salad (for added protein + healthy fats + deliciousness) + a homemade dressing (dejion mustard + apple cider vinegar + maple syrup)- highly recommend the dressing!! Creamy Bowl of Chia Oats❀ such a classic breakfa Creamy Bowl of Chia Oats❀ such a classic breakfast but with some extra goodness to boost your nutrient intake! I topped with antioxidant rich blueberry compote (frozen blueberries cooked in the saucepan with a splash of water) + sliced banana + coconut + hemp seeds. I cook about 1/2 cup of oats with water until it thickens up->then add 1 tbsp. Chia seeds + with small soy milk to get them extra creamy! I also added a bit of coyo coconut yoghurt at the end! 
❀Oats are a great way to start your day as they contain fibre and protein to keep you satisfied for longer and may help with blood sugar control. 
❀Because blueberries are high in vitamin C, it increases the absorption of the iron in oats 👌🏼
