Vegan L A K S A
  • 1 onion
  • 1 tsp coconut oil
  • 1 liter of water
  • 2 cans organic coconut milk
  • 4 Tbs LAKSA paste (can buy from organic stores or make my recipe below)
  • 1 vegetable stock cube
  • 1 packet of rice noodles
  • Veggies
  • 2 cups broccoli
  • 2 cups chopped green beans
  • 1 red capsicum thinly sliced
  • 1 large carrot thinly sliced
  • Garnish
  • Coriander
  • Roast cashews
  • Watercress (optional)
  • Lime
  1. Chop up onion, add coconut oil to a large pot and fry the onion until soft then add in laksa paste and combined.
  2. Add in water, coconut milk, vegetable stock cube and bring to a light simmer.
  3. Add in vegetables and let cook for about 10- 15 mins (depending on how soft you like them).
  4. In a separate saucepan, bring water to boil and add in noodles, cook for 3-5 mins or until soft and drain the water out.
  5. When you are ready to serve, use a large serving spoon to scoop out laksa in a bowl, add the noodles, garnish and enjoy!
