Vegan L A K S A
- 1 onion
- 1 tsp coconut oil
- 1 liter of water
- 2 cans organic coconut milk
- 4 Tbs LAKSA paste (can buy from organic stores or make my recipe below)
- 1 vegetable stock cube
- 1 packet of rice noodles
- Veggies
- 2 cups broccoli
- 2 cups chopped green beans
- 1 red capsicum thinly sliced
- 1 large carrot thinly sliced
- Garnish
- Coriander
- Roast cashews
- Watercress (optional)
- Lime
- Chop up onion, add coconut oil to a large pot and fry the onion until soft then add in laksa paste and combined.
- Add in water, coconut milk, vegetable stock cube and bring to a light simmer.
- Add in vegetables and let cook for about 10- 15 mins (depending on how soft you like them).
- In a separate saucepan, bring water to boil and add in noodles, cook for 3-5 mins or until soft and drain the water out.
- When you are ready to serve, use a large serving spoon to scoop out laksa in a bowl, add the noodles, garnish and enjoy!
